Any of your leftover vegetables from your Christmas dinner, diced, plus in addition if required:
320gbrusselsboiled, also diced
320gonionalso diced
20mloil for frying
50mlevaporated milk
50mlwater, add to milk
2clovesgarlicfinely chopped
Instructions
Boil your additional sprouts, if required.
Fry onion until softened and browned.
Add other vegetables and cook for 1-2 minutes.
Whisk egg, milk and garlic together in a jug, and then pour over the cooked vegetables. Cook for a few more minutes until most of the omelette seems solid.
