Combine ingredients in a mixing bowl, stirring well.
150 g raisins, 200 g self raising flour, 25 g sugar, 220 ml water, pinch salt, 1/2 tsp garam masala
Heat a little oil in a non-stick frying pan and fry dessertspoon sized dollops of the batter, until golden brown on both sides. Sprinkle with a little sugar
Makes 4 pancakes per person.
Serve immediately

What changes can I make
swap out the raisins for any fruit you like
or leave them out altogether
omit the garam masala, or swap for cinnamon or mixed spice
or even make them savoury by adding a combination of tomato puree, garlic, chilli, curry paste or powder
