Breakfast Pancakes

Raisiny pancakes, great hollow leg fillers, super delicious

These always get an 11 out of 10 when I demonstrate them!

What do I need to make breakfast pancakes

▢ 150 g raisins
▢ 200 g self raising flour
▢ 25 g sugar
▢ 220 ml water
▢ pinch salt
▢ ½ tsp garam masala optional

How do I make breakfast pancakes

▢ Combine ingredients in a mixing bowl, stirring well.
▢ Heat a little oil in a non-stick frying pan and fry dessertspoon sized dollops of the batter, until golden brown on both sides.
▢ Sprinkle with a little sugar
▢ Makes 4 pancakes per person.
▢ Serve immediately

What changes can I make

  • swap out the raisins for any fruit you like
  • or leave them out altogether
  • omit the garam masala, or swap for cinnamon or mixed spice
  • or even make them savoury by adding a combination of tomato puree, garlic, chilli, curry paste or powder
