Ingredients

  • 85 g mixed dried fruit
  • 200 g flour self raising
  • 25 g sugar
  • 220 ml water
  • pinch salt
  • ½ tsp mixed spice

Instructions

  • Combine ingredients in a mixing bowl, stirring well.
  • Heat a little oil in a non-stick frying pan and fry dessertspoon sized dollops of the batter, until golden brown on both sides. When little bubbles gradually start appearing in the top surface is a good indication of when to turn them.
  • Makes 3 pancakes per person.
  • Make this breakfast twice in the week if following our Christmas planner.
