Ingredients
- 85 g mixed dried fruit
- 200 g flour self raising
- 25 g sugar
- 220 ml water
- pinch salt
- ½ tsp mixed spice
Instructions
- Combine ingredients in a mixing bowl, stirring well.
- Heat a little oil in a non-stick frying pan and fry dessertspoon sized dollops of the batter, until golden brown on both sides. When little bubbles gradually start appearing in the top surface is a good indication of when to turn them.
- Makes 3 pancakes per person.
- Make this breakfast twice in the week if following our Christmas planner.
