Lunchtime Rice Salad

A simple lunchtime salad, can be used in a packed lunch too

lunchtime rice salad
- 200 g rice
- 150 g swede (cubed and roasted)
- 75 g frozen parsnip (roasted)
- 50 g green peas
- 50 g onion (sliced as finely as your knife allows)
- 2 tsp garlic powder
- dessertspoon balsamic vinegar
- 35 ml vegetable oil
- salt and pepper to taste
Cook rice as per packet instructions, then add all the other ingredients, which will cool it down to room temperature (especially the frozen peas). Taste and adjust seasoning.
The salt value excludes any you have added yourself, as each family's tastes will differ.
