Pasta Alfredo
This pasta recipe is part of monthly meal plan 1 and serves 4
What do I need to make Pasta Alfredo
These ingredients are specific to the meal plan
â–¢ 25 g lard, used on the meal plan, any other fat can be used and I would go for butter
â–¢ 25 g flour
â–¢ pint water or use a stock cube
â–¢ 60 g cheddar
â–¢ 15 g Grana Padano, if not following the plan, you can use Parmigiana
â–¢ 1 tsp mustard powder
â–¢ 50 g bacon
â–¢ 400 g pasta
How do I make Pasta Alfredo
â–¢ First, put your pasta on to boil, and cook as per packet instructions
â–¢ Make a roux with the lard and flour. Add the hot stock in about 4 goes.
â–¢ Between each addition of stock stir the mixture until all the liquid incorporates into the flour and lard. (If you lift the pan off the heat and beat hard with a wooden spoon after the liquid is incorporated your sauce will be beautifully glossy).
â–¢ By the time all the liquid is added you should have a sauce which will coat the back of a spoon. If not add more water or stock.
â–¢ Stir in the mustard and most of the cheese. Leave a spoonful of cheese for the top.
â–¢ Fry finely chopped bacon. Add cooked bacon to the sauce and season sauce with pepper and salt. Stir sauce into cooked pasta.
â–¢ Put saucy pasta in baking dish.
â–¢ Top with remaining cheese.
â–¢ Cook in oven at 180 degrees until there are nice brown crunchy bits on the top.
What changes can I make

â–¢ 400 g pasta, any shape, whatever you have
