Bean Curry

Curry in a hurry – on the table in 25 minutes!

This curry is part of monthly meal plan 1 and serves 4. 

What do I need to make curry in a hurry

▢ 1 can tomatoes
▢ 1 tin baked beans
▢ 1 can kidney beans
▢ 60 ml veg oil
▢ ½ tsp chilli
▢ 2 tsp mustard powder
▢ 2 tsp garam masala
▢ 320 g onion sliced
▢ 2 tsp garlic
To Serve
▢ 400 g rice

How to make this curry recipe

▢ Put sliced onions, garlic, chilli, and spices in a pan with the oil, and cook til soft.
▢ Add tomatoes and cook for a few minutes, until the tomato juice has reduced down to a thicker sauce.
▢ Add baked beans and drained kidney beans and cook for a few more minutes until it is cooked, hot throughout and well mixed.
▢ Season to taste.
▢ Serve with 100g rice per person.

What changes can I make

If you are following meal plan 1, you don’t have much room to change things. If you are picking and choosing recipes, there are many ways touring the changes. 

  • Use any combinations of beans you fancy. Maybe use dried ones as they are so much cheaper than tinned ones. 
  • Add a good splodge of curry paste or curry powder. Pataks are particularly good and there are lots of different flavours
  • Use ghee instead of oil to enrich the flavour
  • Add some more vegetables, sliced carrots, chunks of sweet potato or pieces of potato for instance
